Skratch Hacks: Vegan Cookie Remix

Growing up, I may have torn into my fair share of cake and brownie mix — easy baking for a kid in the kitchen — but my mom made everything baked from scratch. Chocolate chip cookies, apple pie for my dad’s birthday, all manner of bars and treats and even bear shaped bread during the holidays. As I learned to bake for myself, I too baked from scratch, something that has grown into a passion in my adulthood.

However, I will concede that life has changed a lot. Not only do I still devote as much time as I can to personal loves such as running and writing, I am now also a busy mom with a full time job. Taking time to lovingly measure ingredients is now a luxury, but as a choosy vegan, grabbing a boxed mix isn’t necessarily an easy fix.

Enter Skratch Labs and their cookie mix. Not only does it make for some tasty cookies but ones that I can eat right before a workout or during a long run. Who wouldn’t want to be fueled by cookies? Thanks to the Feed, I receive the cookie mix regularly. Here are my first three Skratch cookie bar hacks: peanut butter filled, chocolate-chocolate chip, and chocolate-chocolate lactation cookies.

Oh yeah. I went there. And they’re all vegan — but you wouldn’t know that eating them. I promise. Not into what I’ve come up with? Check out the Skratch Labs blog for more vegan options.

PEANUT BUTTER FILLED SKRATCH COOKIE BARS
satisfy your need for fuel and peanut butter all at once

You’ll need:
– 1 box Skratch Labs cookie mix
– 1 T chia seeds + 3 T water or non-dairy milk
– 1/2 c vegan butter or margarine
– ~1 c chunky peanut butter (or nut butter of choice; less is recommended if you won’t have anything to help wash these down)

– Grease a 9-x12 pan; turn oven on to 350F.
– Prepare the chia ‘egg’ by whipping together the seeds and non-dairy milk or water. Let sit for about five minutes.
– Cream together softened ‘butter’ and ‘egg’ of choice.
– Add the cookie mix; combine. Careful to not overmix.
– Spread about half of the cookie dough in a thin, even layer along the bottom of the prepared pan.
– Add the nut butter in small dollops on top off the cookie dough. Spread it out a bit if you can.
– Cover the nut butter best you can with an even layer of the remaining cookie dough.
– Bake for about 25-30 minutes or until the bars spring back when touched. These may take longer than usual because of the filling, so make sure that they’re baked all the way through. Makes soft, super nut-buttery cookie bars. Have a drink on hand!

 

CHOCOLATE CHOCOLATE-CHIP SKRATCH COOKIE BARS
with a training calendar like that, who has time to make brownies?

– 1 box Skratch Labs cookie mix
– 1 T chia seeds + 3T water or non-dairy milk
– 1/4 c vegan butter or margarine
– 1/4 c coconut oil
– 2 T cocoa powder + 1 T black cocoa (or 3-4 T of cocoa powder)
– 2 T non-dairy milk
– 1 c chocolate chips

Begging dog optional, but good company to have. Watch for drool; it can make for a hazardous work environment.

How to hack it:
– Grease a 9-x12 pan; turn oven on to 350F.
– Prepare the chia ‘egg’ by whipping together the seeds and non-dairy milk or water. Let sit for about five minutes.
– Cream together softened ‘butter,’ coconut oil and ‘egg’ of choice.
– Add cocoa powder and non-dairy milk. Thoroughly combine before adding cookie mix.
– Fold in chocolate chips and press into prepared pan.
– Bake for about 25-30 minutes, as written on the box. Makes for cakey brownie-like cookie bars.

 

CHOCOLATE LACTATION SKRATCH COOKIE BARS
the ultimate fuel for the nursing mom-on-the-move

– 1 box Skratch Labs cookie mix
– 1 T ground flaxseed + 3T water or non-dairy milk
– 1/2 c vegan butter or margarine
– 2 T cocoa powder + 1T black cocoa (or 3-4T of cocoa powder)
– 2 generous T brewers yeast
– 1 T vanilla (this plus the cocoa helps offset the bitterness of the yeast)
– 6 T non-dairy milk
– 1/2 c rolled oats (for extra lactation goodness)
– 1 c chocolate chips

How to hack it:
– Grease a 9-x12 pan; turn oven on to 350F.
– Prepare the chia ‘egg’ by whipping together the seeds and non-dairy milk or water. Let sit for about five minutes.
– Cream together softened ‘butter,’ coconut oil and ‘egg’ of choice.
– Add cocoa powder, brewers yeast and non-dairy milk. Thoroughly combine before adding cookie mix and rolled oats.
– Fold in chocolate chips and press into prepared pan.
– Bake for about 25-30 minutes, as written on the box. Makes for cakey brownie-like cookie bars that you, active nursing mom, can hoard for yourself and say, “Oh those are my lactation cookies, you won’t want any of those.”
